Under the Tuscan Sun

If you’ve dreamed of jetting off to Italy to taste wines, sample foods, and soak up the gorgeous Mediterranean views, get ready to enjoy an Italian favorite. The flavors of Italy bring us a plethora of meal ideas, from pastas to meatballs, pizzas to paninis, we can’t get enough of this food-famous country.

Try out this new recipe to bring a taste of Tuscany home:

Tuscan Bean Stew

INGREDIENTS: 

• 1 pound of Soul Brothers Meats “OG Italian” sausage
• 3 cans of cannellini beans
• 2 cloves of garlic
• 5 sage leaves
• 6 oz. can of tomato paste
• ½ T olive oil
• Salt and pepper to taste

DIRECTIONS:

1. Drizzle olive oil into a large pot on medium-low heat.
2. Peel garlic cloves but keep whole.
3. Add sage leaves and garlic to oil.
4. When garlic becomes colored (browns), add beans, including 6T of liquid from the can (drain the remaining liquid).
5. Add in tomato paste.
6. Let beans simmer for 10 minutes.
7. Cut sausages into bite-size coins; add sausage to beans.
8. Season with salt and pepper to taste.
9. Simmer all gently until sausages cook through, about 20 minutes.
10. Stir frequently during simmer, but do not mash beans.
11. Remove garlic and serve with salad and crusty bread.

The versatile flavors we create can even mix into Asian dishes to liven up or change the tastes of classic take-out favorites. Skip the delivery boy, and bring your Soul Brothers Meats to the next level with this deconstructed twist on a Chinese appetizer favorite. 

Egg Roll Bowl

INGREDIENTS: 

• 1 T. vegetable oil
• 1 clove of garlic, minced
• 1 T. fresh ginger, grated
• 1 lb Soul Brothers Meats Bulgogi 
• 1 t. Toasted sesame oil
• ½ onion, sliced thin
• 1 c. of shredded carrot
• ¼ green cabbage, sliced thin
• ¼ c. soy sauce
• 1 T. sriracha
• 1 green onion, sliced thin
• 1 T. toasted sesame seeds
• Kosher salt

DIRECTIONS:

1. In a large skillet over medium heat, heat vegetable oil.
2. Add garlic and ginger and cook until fragrant, about one minute.
3. Add Bulgogi and brown, about 8 to 10 minutes, while breaking into a crumble.
4. Push pork to the side of the pan, and add sesame oil.
5. Add onion, carrot, and cabbage in sesame oil.
6. Stir to combine in meat, soy, and sriracha.
7. Cook until cabbage is tender, about 5 to 8 minutes.
8. Season pan with salt.
9. Transfer mixture to a serving dish.
10. Garnish with green onion and sesame seeds.

Head South of the Border

Sausage can bring a new spin to taco night, too. From nachos and burritos, to hard and soft tacos, simply swapping your protein for flavorful Soul Brothers Meats’ sausage can bring a delicious twist to this crowd-pleaser. 

Tacos are also a fan favorite since they, too, are incredibly versatile. Since you get to pick your own toppings, you can alter even this recipe to your family’s preferred taste. 

7-Layer Taco Casserole

INGREDIENTS:

• 1 ½ lbs Soul Brothers Meats Jalapeno and Cheddar sausage
• 3 T. (or 2 packets) of taco seasoning
• 1 ½ c. of salsa (your choice of heat level)
• 16 oz. can of refried beans
• 2 c. of cheddar cheese
• 35 bit-sized tortilla chips (small, round)
• 8 oz. of iceberg lettuce
• ¼ c. diced tomato
• ¼ c. sour cream

DIRECTIONS:

1. In a skillet, brown sausage, breaking into a crumble, until cooked thoroughly.
2. Drain sausage.
3. Add taco seasoning and salsa to the pan until thickened (about 5 minutes).
4. Spread refried beans into a 9×13-inch casserole dish
5. Top beans with sausage, then cheese.
6. Place a single layer of tortilla chips over cheese.
7. Bake the dish at 400 degrees F for 15 minutes, until the cheese is melted and the chips are very crispy.
8. Top warmed casserole with lettuce, tomato, and sour cream.
9. Serve immediately over rice, with additional chips, or alongside hard taco shells.
